Creative 'Holm' Cooking Corner Print E-mail
Kenna Holm - NEBO REPORTER

When I was first married (over 50 years ago) my friend Lorraine Mortensen had a recipe for sloppy joes that was so good. I lost that recipe and felt so bad because it was such a good one and the new sloppy joe recipes were so different. Well I just happened on to that recipe again and wanted to share it with you. It s easy to make and great for a family gathering or party.

Sloppy Joes (old style)

5 #. browned hamburger

5 med. onions chopped

2 green peppers chopped

2 c. chopped celery

28oz bottle of ketchup

1/2 c. mustard

1/2 c. brown sugar

1/2 c. Worcestershire sauce

2 cans chicken gumbo soup

Salt and pepper to taste

Mix together and simmer.

This serves about 30 but you can cut it down or freeze it in portions that would suit you. Good to have on hand in the freezer for a quick dinner.

What's sloppy joes without a good potato salad?

Kenna's Potato Salad

Boil 6 potatoes with jackets on. Cool and cube

Boil 6 eggs hard

Chop 1 large onion

Layer a layer of potatoes then eggs and then onions, salt and pepper that layer

Continue layering and seasoning until all ingredients are in bowl.

By salt and peppering as you go it seasons the salad better because potatoes need a lot of salt to not have a blah taste.

Dressing:

2 c. miracle whip

1 c. milk

1/4 c. sugar

1 Tb. salt

1/2 tsp MSG or Accent

pepper

Mix well and pour over salad. Make sure salad has a lot of dressing so it is not dry. Potatoes absorb a lot of dressing.

This dressing is also good on macaroni salad.
