There are people that come into your life that seem to leave a mark on your life forever. Maybe it is something that they said, or something that they did, or maybe it is just they way they live their life that makes you never want to forget them. Often times you don't think about this person on a daily basis. You may have thoughts of them from time to time, or maybe it's just hearing their name that takes you back to a special time you shared with them.
This past couple of weeks, I have thought of a friend that I have not had contact with in quite some time. I often think of this friend when my life becomes troublesome, or I think that I cannot have one more trial in my life. My friend has had more trials than I can count. He lives his life with health conditions that are unfair and cause him grief on a daily basis. Mac Carterc is a man with character, talent, intelligence, love and compassion. Mac can make you feel on top of the world on your worst day and he always makes you feel like there is no one more important than you. Mac struggles daily and besides seeing him in a wheelchair, he would give you no indication that he struggles daily. His happiness spreads like wildfire and his zest for life is un-measurable. This past week as I heard that Mac was looking for cold soup recipes and that cold soup was one of his favorite meals, I jumped at a chance to give him any knowledge that I have on the topic. Mac, this weeks recipes are for you. I think of you often, and have great respect and love for you. I have a sign hanging in our home on your behalf. I will never forget the day I asked you how you were doing and you said, "Life is wonderful." I live by that saying. Mac my life is wonderful because you have been a part of it. Cold Soup is easy to make. Take the fresh ingredients in your garden, or from your local market and throw together a delicious meal. Cold soup is easy to take in your cooler for a picnic, or pull out of your fridge and eat after a long day. You can make fruit soup, veggie soup, or a simple soup with rice and noodles. Chicken and Rice Cold Soup • 6 cups chicken stock or vegetable stock or canned broth • 1 onion, chopped • 1 carrot, sliced • 2 stalks celery, sliced • 1/3 cup uncooked white rice • 1 1/3 cups fresh spinach, washed and chopped • 1 1/3 cups lettuce - rinsed, and torn into small pieces • 1 1/3 cups chopped fresh parsley • Salt to taste • Pepper to taste • 1 pinch cayenne pepper (This is optional, but delicious! The more you use the spicier your soup will be.) 1. In a saucepan cook the stock or broth, onion, carrot, celery and rice for 35 minutes covered or until rice is soft. 2. Place spinach, lettuce and parsley in saucepan. Cover with water and bring to a boil. Drain, and add to soup. Season with parsley, salt, pepper and cayenne pepper. Mix in blender until smooth. May be thinned with more broth if needed. Refrigerate overnight or 4-5 hours until cold. (Refrigerating overnight makes the flavors of the soup taste better.) Basil and Tomato Cold Soup • 12 large tomatoes, chopped • 1/3-cup fresh basil leaves • 3 tablespoons vinegar • 2 teaspoons garlic salt • 3 cups chicken broth • 3 Tablespoons olive oil 1. In a blender or food processor, combine tomatoes, basil, vinegar and garlic salt. Puree until smooth. Transfer to a serving dish and stir in broth and olive oil. Chill in refrigerator until cooled. |
