Avocados can be pretty versatile. They go great on a sandwich or wrap, you can use them for spicy guacamole, get them in a salad or just eat them plain.
But in recent years, a popular use of the delicious fruit — yes, it is a fruit — is for avocado toast.
Whether it's as simple as toast topped with avocado and seasonings, or more elaborate with a variety of toppings like eggs, salmon, mushrooms or bacon, the dish is a great way to celebrate National Avocado Day Wednesday.
These six restaurants in Utah County feature unique avocado toast takes on their menus.

Hobble Creek Coffee
At Hobble Creek Coffee, you can get a plate of avocado toast. The coffee shop serves Bacon and Sauted Mushroom, Sunny Side Up, Smoked Salmon and regular Avocado Toast. It's a perfect addition to your cup of joe.
Location: 388 N. Main St., Springville
Cubby’s added Avocado Toast to its menu when the restaurant began serving breakfast in 2017. It includes avocado served on seeded bread, topped with cracked black peppercorn, sea salt and olive oil.

Rugged Grounds in Provo serves several breakfast items, including Avocado Toast. Their toast is made from sourdough bread and is topped with organic butter, avocado, sesame seeds and seasoning.

Peace on Earth Coffee
Peace on Earth Coffee serves a a variety of toasts, all on locally-made wheat bread. Their toast comes with a variety of toppings, including avocado.

Aubergine and Company
On its breakfast menu, Aubergine and Company has Avocado Toast that is sprouted toast or gluten-free cheese bread topped with scrambled eggs, feta cheese, kale, tomato vinaigrette, olive and avocados.
They also serve Burrata Avocado Toast, which has burrata, cashew cream, Za’atar Spice and avocado atop sprouted bread.
As a side note, you can also get your regular Avocado Toast toppings in a bowl with the toast on the side.

Block Restaurant’s brunch menu includes Avocado Toast, made with sourdough bread, garlic aioli, avocado, chimichurri and a soft poached egg.
If you want to take a step up, you can also try their Avocado Eggs Benedict, which uses an English muffin and comes with avocado, hollandaise and a soft poached egg.

Black Bear Diner
Many people love the Black Bear Diner for its breakfast menu, and one of its specialty items is Avocado Toast. It includes avocado served on a toasted multigrain Stirato and is served with sliced tomato and fresh fruit.
