Joe Bandido’s in Springville has a low-key homey ambience and lots of good Mexican food. The signature El Bandido, a monster tostada with your choice of chicken, beef or pork, is an excellent introduction to the menu of reliable Mexican favorites. The restaurant also offers some tasty appetizers, especially its quesadilla, which improves upon the usual blueprint (tortilla plus cheese) with the addition of finely chopped vegetables. The complimentary corn chips, made fresh every day, have a sterling reputation, but don’t enjoy them too heartily: Unlike at most Mexican restaurants, where the chips and salsa keep coming until you say, “No mas,” the Bandido charges you extra after the first basket.
