Utah County diners can find themselves on a bit of a slippery slope when it comes to picking a favorite Mexican restaurant as various options abound and run the gamut when it comes to price, quality, ambiance and overall scope. Like a lot of Mexican restaurants, you can get a lot of food at Coyote’s for a good price, with entrees ranging from $5.99 to $15.99. Our favorite dish here was the grilled steak fajitas. We suggest washing it down with Horchata, a drink featuring a combination of rice milk, sugar and cinnamon.

Mountain West Burrito

You can no longer get gas at the old Minuteman service station halfway up the State Street hill in Provo, but what about great Mexican food? Thanks to one of the odder food service configurations in the valley — smoke shop/convenience store side-by-side with fresh Mex diner in the shadow of abandoned gas pumps — all of your wildest dreams of burritos, chimichangas, tacos, nachos and more, prepared using local and organic ingredients wherever possible, can come true at Mountain West Burrito. You’ll find plenty of fresh fixings, great taste and fast, friendly service at Mountain West. You can get chimichangas, burritos, tacos, nachos, salads and quesadillas, all served in generous portions for not much dough. The chimichangas are especially good, and the nachos also earned high marks on our recent visit.
