Specialty pizzas galore are available at Fat Jack's Pizza in Payson.

Busy, hot summer nights often call for a break from the heat of a kitchen stove, right? These types of nights are perfect for calling up your favorite pizza joint for some delicious Italian goodness. 

On a recent, especially hectic Monday night of running errands right after work, while also trying to beat the incoming rainstorm, I decided it was a great night for pizza. Quick, easy and, lucky for us, just around the corner!

While there are many pizza options — in fact all the chains — in and around Payson, my family and I love and actually prefer the tastiness of Fat Jack’s Pizza. Just a hop, skip and jump away from our house, this popular pizza joint is our favorite place to pick up a couple of pizzas to enjoy at home while watching the latest DVD release or, in the case of Monday night, a powerful rainstorm as it rolled by.  

Fat Jack’s has a menu loaded with delicious specialty pizzas — some traditional favorites like the Mambo Combo with its multiple meat and veggie combination or the Triple Bypass, all-meat option — there are also a few flavor twists to other favorites. For instance, The Islander might sound like a traditional Hawaiian pizza until you notice the additional crunch of sliced almonds and subtle cinnamon sprinkles. The Cowboy’s smoky bacon-tomato-onion-green pepper combo, for those brave enough, can be punched up even more with a few jalapeños as well. 

While all the pizza combinations are stellar, my favorite item on the Fat Jack’s menu is the Famous Cheesestix — breadsticks doused in garlicky butter and melty cheese. Dunk these breadsticks into the homemade Creamy Italian dipping sauce and you may just forget to share with the rest of your family. Trust me, they are just that good. 

Want even more kick to those breadsticks? Go for the Western Stix — Cheesestix topped with bacon, tomatoes, onions and green peppers. And if you’re brave, add those jalapeños, too. 

After you’ve indulged in your fill of flavor-packed pizza and cheesy, dunkable breadsticks, be sure to save some room for a little dessert. Laced with icing, the Cinnamon Stix are a great conclusion to a pizza-filled evening. 

Whether you dine in, pick up or have it delivered, Fat Jack’s Pizza in Payson is a great place to enjoy handmade pizzas with fresh toppings and fun flavor combinations. Don’t forget to add at least one order of those Cheesestix, too. You can thank me later.
