Peak your interest: French toast at The Matterhorn offers a mountain of flavor

Move over, Waffle Love, another breakfast food truck is in town. I love hiking and The Matterhorn serves up a mountain of French toast that I’d be willing to summit every day.

Don’t believe me? Oh ye of little faith. Ready your packs (with wallets and purses in tow) because when I’m finished you’ll be yearning for a trek of your own and a little hint — the views are spectacular. Mountains of strawberries, chopped apples and sliced bananas are a few fruits you’ll see from your labors.

Ever-changing, The Matterhorn travels between both Utah and Salt Lake counties each week. Though I’ve seen it present at many Provo Food Truck Roundups, this week it happened to be in Orem during multiple meal times.

The menu is simple and flexible. We ordered three of the four available options: North Face, Switzerland and the Jon Special — only leaving out the Summit. (So maybe technically I didn’t reach for the Summit, but you’ll be more than pleased with the North Face.)

The winter air was picking up and a chill setting in, so after the speedy assembly of our order we took to the next best thing after a tent: a car. Too impatient for the ride home, we huddled around the console which proved a possibly regrettable and messy prospect for the devouring of our French toast.

Suggested as the most popular route to take, the North Face was worth the $9. Before you gawk at the price, remember just like with any rigorous hike that tempts you to give up, the journey proves the destination priceless. The North Face features French toast covered in Biscoff with fresh bananas and strawberries carefully piled and topped with fluffy cream and the most mouth-watering coconut syrup. 

If I was an 18th-century poet it’s possible I would’ve written volumes revolving around my new-found love for this coconut syrup. I do not jest. Unlike typical syrups, it was not thick and gooey, leaving the feeling of rotting teeth. It was light, sweet and every bit superior to any syrup lining the shelves at the store or even dare I say, homemade buttermilk syrup.

My love of poetry and syrup aside, the Switzerland and Jon Special were also fulfilling and surprisingly very different. The Switzerland was rich (not unlike its namesake’s financial institutions); the thick piece of toast is coated with Nutella, sliced bananas, cream and topped with the drizzle of coconut syrup. The Jon Special featured an unusual pairing that proved every part adventurous and delicious — French toast with Biscoff, chopped apples, massive raspberries, and cream accompanied with a caramel syrup.

Where other food trucks are skimpy on toppings and hit-or-miss with quality, The Matterhorn is bountiful and that’s something we can appreciate along the Wasatch Front. See you at the summit.
