The Mouse Trap Truck will capture your affections with its delicious and innovative grilled cheese creations -- such as The Nicolas Cage, which features pulled pork, sharp cheddar cheese, sliced apples, brown sugar glaze and spring mix.

Trying to please a home filled with picky eaters can often be quite a challenge. While one would love to go out for Chinese, another might want to stay home and enjoy homemade tacos. One may be craving a burger while another simply wants a fresh salad (that’s usually me). 

It was for that very reason — trying to appeal to different dinner cravings — that three members of the Durrant family decided to take our first foray into the world of food truck roundups. One location, dozens and dozens of food options! 

Sometimes all those options — everything from gourmet mac & cheese to Korean barbecue to wood-fired pizza and much more — can be a bit overwhelming, but on this one particular Thursday evening I had a clear plan of what I wanted to feast on. And let me just say, grilled cheese never tasted so good! 

The Mouse Trap Truck, with its brightly hand-painted yellow and white stripes and clever little mouse, was easy to spot amid the circle of other food vendors. It was easy to make my way through the maze for my little piece of (grilled) cheese.

Like most food trucks, the Mouse Trap’s menu is pretty simple with eight featured sandwiches and four dessert sandwich options, too. 

Because I’ve been following the Mouse Trap Truck on Instagram (@themousetraptruck) for a while, I had heard rumor the Odd Father and the Nicolas Cage sandwiches were the most popular. After looking at the list of ingredients in both sandwiches, I understood why. 

The Odd Father features grilled chicken topped with Havarti cheese, caramelized onions, creamy goat cheese, a sweet balsamic glaze and a spring mix. Grilled to perfection, there was nothing “odd” about my ohs and ahs and the smile on my face while I devoured half of the sandwich. 

Who knew such delicious, gourmet creations could come out of a truck?

But wait, there was still more to come in the form of the best known thing, in my opinion, to have Nicholas Cage’s name attached to it.

The Nicolas Cage grilled cheese is a pulled pork sandwich featuring the creatively paired combination of sharp cheddar cheese, sliced apples, brown sugar glaze and spring mix.

This sandwich trumped all of actor Nicolas Cage’s film work to date, with maybe the lone exception of “The Rock” (hello, Sean Connery!) The blend of flavors, when drizzled with that sugary glaze, brought even more raves than the Odd Father. The best part possibly being the bites of bread saturated in that delicious glaze. 

Sharing these sandwiches with my husband, he, too, thoroughly enjoyed these unique grilled cheese creations. In fact, we loved them so much that I tracked down the Mouse Trap Truck the very next day for a Nicholas Cage-filled lunch for myself and afternoon snack for my husband.

Other grilled cheese sandwiches on the menu that I would also like to try include the Luau featuring a caramelized pineapple cream cheese spread. Dave’s Spicy Crack with it’s pepper jack cheese, jalapeño kettle chips and sriracha spread likely lives up to its spicy name. The Pesto features tomato, provolone and pesto sauce topping slices of salami for an Italian favorite.  

Since I love all things dessert related, especially when those desserts feature white chocolate, all three of us indulged in the sweet Instagrahamy sandwich. With apples, white chocolate, bits of crumbled graham crackers and caramel, this treat served between two slices of powdered sugar-topped bread, was truly a very sweet ending to a surprisingly incredible meal. 

If you are looking for a gooey, unique fusion of flavors, all tucked between two pieces of grilled bread, make sure to track down the Mouse Trap Truck.

Locations: Vary, but you can typically find it at the SCERA food truck round up Monday nights and the Provo Food Truck Round Up Thursday nights.
