Food truck schedules can be notoriously difficult to track down. At times a rally or group of trucks seem to pop up in random, surprising places like flash mobs and you’re fortunate to be there at the right time and place. At other times, I feel like I’m geocaching and consider myself lucky when I successfully track and locate one of these metal boxes of food on wheels.

This round, I found myself at the Saratoga Springs Food Truck Underground at Neptune Park. It was my first foray into that area, but it was lively and the park itself was crawling with kids well into the dark night. My adventure to Saratoga Springs was spurred by my search for one of the newest food trucks in the valley: Amkha Misky Peruvian Specialties.

I passed this red truck driving on the road a few weeks ago and was extremely curious about not only this new food, but the unusual name as well.

After talking with the man and woman running the truck, I discovered that the name is a dialect of an indigenous language and in rough translation basically means “delicious potato.”

For those unfamiliar, like I, with Peruvian food, apparently the country boasts more than 100 different types of potatoes. Move over Idaho! This sounds like my kind of country.

The menu at the Amkha Misky truck is short and simple. They have Stuffed Potatoes, Empanadas, Peruvian Tamales and an assortment of drinks for those on the go. (Though it was not available the night we visited, they often offer a salad of sorts as well.) 

Now unlike the unreliable status of food truck locations, I have a reliable, constant curiosity for empanadas. I don’t care what country or kitchen they come from, I will always try one. Whilst I’ve yet to find one that lives up to the cheese empanadas (the size of plates) I ate for too many meals while traveling in Chile, Amkha Misky makes a concerted effort when it comes to its Peruvian offerings. Though price and serving amount was initially confusing (a bit pricey at $3 each), my sidekick and I tried one of each: Beef, Chicken and Spinach. My favorite was the beef — with ground meat, onion, bits of egg and other surprises. However, my counterpart preferred the Chicken Empanada with its shredded meat and unique flavor from a combination of spices.

The Peruvian Tamale was sweeter in flavor with bits of chicken and mushroom inside ours. It was topped with pickled red onion and the two most delicious sauces — one a spicy red and the other a more mild green. Once we sampled the sauces, we eagerly asked for more to go with all of our entrees.

Our unanimous and favorite dish was the Stuffed Potato. It was unique in its flavor and ingredients and surely seemed authentic and far from typical American fare. During our culinary exploration, a rudimentary dissection of the dish concluded the perfectly crunchy exterior of the ball was breaded and inside was made of mashed potatoes filled with seasoned ground beef, onion, mushroom, egg and perhaps raisins. Split in half like a baked potato, it was drizzled with the tasty, memorable sauces and topped with more pickled onion. 

To complete our international meal, we decided to try a Peruvian soda, Inca Kola. While a yellow-green like Mountain Dew, its sweet taste resembles bubble gum and cotton candy. It’s quite a punch. 

Among the throngs of food trucks selling pizza, corndogs and breakfast, Amkha Misky’s offerings were a welcome international adventure for the taste buds.
