Sundance Resort restaurant leaves you scenically satisfied
There are quite possibly only few places in the state more peaceful and serene than Provo Canyon in the fall.
The summer temperatures are beginning to wane and the leaves will soon be changing, setting the mountains ablaze with vivid color. Now, imagine enjoying all that along with a luxurious meal.
My wife and I recently took advantage of that combination with a Friday afternoon excursion to The Foundry Grill at Sundance Resort. It was a stunning day as we made the semi-short jaunt up Provo Canyon — imagining all the way how much better the drive would be in the weeks ahead when the changing of the leaves are in full swing.
So many opportunities presented themselves as we pulled into the Sundance Resort parking lot. Somehow we avoided the siren call of outdoor mountain adventure — whether it be zip-lining, mountain biking or hiking — and focused instead on our lunch reservation.
We were delighted to be seated at a table at the restaurant’s outdoor patios, surrounded by greenery and adjacent to where a babbling brook cascaded into a small pond. Most of the tables were shaded, but as the sun advanced during our hour-long meal, part of our table ended up in direct sunlight, making things a bit toasty. No problem — we simply shifted the table a foot or so to get back in the shade.
The lunch menu featured many intriguing possibilities, and in the end we opted for a few of those as well as some of our own comfort selections.
We started things off with a couple specialty juice drinks — that were both amazing. The Canyon Breeze offered a tantalizing mixture of orange, apple and pineapple juices blended with a strawberry puree. The Sundance Spritzer combined cranberry and pomegranate juices with Sprite and basil. It was hard for either of us to pick a favorite, since they were both so invigorating, so we occasionally would switch glasses back and forth for further sampling.
We had heard good things about the Truffle Mac n Cheese appetizer — and the dish certainly lived up to its reputation. The great thing was that it wasn’t overly cheesy, like some of the more pedestrian mac and cheese versions we’ve walked across. The taste was much more sublime and augmented with herbed Panko bread crumbs. Extremely delicious!
My wife is a Tortilla Soup connoisseur — to the point where she is almost compelled to order it whenever she comes across it on a menu. She gave the Foundry Grill version high marks. I also loved its rich, hearty flavor, and many ingredients, including tomatoes, corn, avocado slices, cilantro, onions and, yes, multi-colored tortilla strips.
For entrees, we ordered the Steak & Frites plate and the San Marzano Tomato pizza. The steak came on top of the caramelized onions and was accompanied by a brandy peppercorn sauce. The steak was most excellent — although I wished the caramelized onions were a bit more plentiful. The brandy peppercorn sauce was a nice complementary sidekick. The thin-cut fries were also delicious.
The San Marzano Tomato pizza was also good. It featured a thin crust, mozzarella cheese and basil, topped with slices of tomato. Seeing that a pad of butter had melted in the sun by the end of our meal, we audibled and poured it over the remaining end pieces of crust. Yum!
There were dessert offerings available — but truth be told, we were tapped out by this point in the meal, and content to finish our drinks while pondering both the beautiful surroundings and the potential for a late afternoon nap.
The Foundry Grill is also open — with separate menus — for breakfast and dinner. So whatever time of day suits your fancy, you’re sure to find an upscale meal to meet your expectations. And it would hard to imagine a more perfect time to visit than the colorful weeks ahead.
