Lunch Ladies enjoy merry March at Joe Bandido’s Mexican Restaurant
The month of March is typically a pretty great month for celebrating.
There is Pi day, St. Patrick’s Day, Easter, and of course my beloved March Madness begins!
Plus all of the Lunch Ladies have some very special people in their families with March birthdays, so we’d be remiss if we did not give a shoutout to them as well.
And in addition to all of that goodness, spring starts to break through here and there, thawing out the winter doldrums. So overall, I’d say March is a winner!
Some other months just can’t compete, I mean they try, but they struggle to have as much cumulative awesomeness.
Well, the Lunch Ladies determined such a fantastic month deserved an equally splendid restaurant recommendation. So we decided to venture outside the Provo/Orem area to take our readers to a restaurant we love, but had not yet reviewed. Get ready for it; we went all the way to Springville. I know, how did we ever manage the trek, right?
Well we did, because March deserved it, and so did our readers who might not know about the lovely Joe Bandido’s Mexican Restaurant. I’ve been going to this restaurant since I was a young little tyke at BYU. It’s been our gathering place for group dates, girls’ night outs, and roommate reunions. Clearly there is something that keeps bringing us back, and this outing was no exception.
We made the quick drive to the restaurant and shuffled our way into the crowded entrance. We were surprised that even though it seemed busy, we didn’t wait long at all to be seated. Then a friendly member of the wait staff took our drink orders to get us started while we waited a minute for our waiter to come.
Our extremely efficient waiter was there in no time with a basket of hot, fresh chips, salsa and a welcoming attitude to take our order and answer our questions. Even though there are $7.99 lunch specials, we all went with regular meals, after seeing some of our usual go-to favorites.
Here is what the Lunch Ladies ordered:
Janell — Steak Fajita (for 1) 10.89, and Regular Coke 2.49
So there is this place that lies right at the end of Provo and the start of Springville called Joe Bandido’s. This is a location where you can get pretty great Fajitas. On this wonderful occasion I chose steak. I just love that sound as the waiter brings out the sizzling pepper, onions and steak. Then the ultimate enjoyment begins when I get to choose what each bite will look like and the tastes that I will be experiencing. That is one of my favorite things about getting Fajitas anywhere. Each small taco/burrito (depending on personal preference) was exactly what I wanted it to be. The beans, cheese, lettuce, guacamole, peppers and steak were all combined to my specifications. It was amazing and I was able to top it all off with a delicious cold Coke. It was a perfect meal.
Jennette — Fiesta Quesadilla with Chicken $9.69, and Diet Coke $2.49
For our lunch today, we decided to take a lovely little drive to Springville. We have been to Joe Bandido’s before so I knew I was going to be happy with our choice today. Like most Mexican restaurants, Joe’s serves fresh hot chips and salsa before your meal comes. I think I was extra hungry today because I’m sure I ate at least one whole basket by myself. I quickly ordered a Diet Coke since I knew how delicious it was going to be, and then I added the Fiesta Quesadilla. This is a large flour tortilla served with chicken, plenty of cheese and a green chile mix. Delicious! The side of refried beans, guacamole and sour cream were a very good choice for some extra chip dipping.
Gabby — Nachos With Chicken 10.89
Well, surprise, surprise, I chose to order nachos at a Mexican restaurant. But in my defense, Joe Bandido’s has my favorite corn tortilla chips of any restaurant I’ve been to in Utah County. (And that’s saying something considering my vast experience eating corn tortilla chips!) So, naturally I wasn’t going to pass up this opportunity to have them as my meal, even if we did just down them by the fistful since chips and salsa were served complimentary. They are just sooo good there! So, yes, I went with nachos, and I am glad that I did. They were a massive plate of crisp chips, bubbling white and orange cheeses, tender chicken, fresh guacamole, smooth sour cream, celery, lettuce, jalapenos, tomatoes, and Joe Bandido’s signature seasonings and sauce. So delicious! This meal could easily be shared or the leftovers packed up for another day. Tasty, tasty, tasty!
We were very pleased with our meals and our experience at Joe Bandido’s. Our waiter was on top of everything from keeping the drinks flowing, to the chips and salsa as well. The food was fresh, plentiful and fantastic! We were able to relax, stuff our faces, and chat about the NCAA Basketball Tournament; what more could you honestly ask for in this grand ole’ month of March? Loved it!
