The whimsical desserts at Fillings and Emulsions in Provo go beyond looking and tasting beautiful.

Each bite takes the mouth on a journey — be it sweet, tart, salty or somewhere magical in between.

I recently enlisted the help of three fellow sweets lovers to sample a variety of sugary creations at the new Latin and eclectic patisserie. The colorful display of macarons and desserts drew us in as we entered the shop, and we couldn’t wait to taste a few.

We aimed to try the most popular items on the bakery’s menu and started with our savory option: a Cuban Sandwich Pie. The warm meat, cheese, mustard and dill pickle filling made for a delicious combination, and the puff pastry surrounding it was perfectly flaky and golden.

Then, without further ado, we moved on to the desserts. Though the Churro Dulce Cruffin was a little hard and messy to eat, we loved the flavors of the cinnamon sugar, buttery laminated dough and dulce de leche filling.

Things started to get especially interesting with the next item we tried, a Key Lime Cheesecake. Like most of the desserts at Fillings and Emulsions, the elegant dessert was picture perfect, with a shiny, colorful glaze, chocolate seal, whipped cream and crunchy gold pearls. Each flavor took its turn, ricocheting in the mouth between sour and sweet.

We were amazed with the way each dessert afterward underwent a similar transformation in the mouth with every bite.

The Milk Chocolate Passion Fruit Tart paired punches of tropical passion fruit with subtle hints of milk chocolate. The Popcorn Panna Cotta offered a unique combination of super salty caramel, sweet cream and crunchy caramel popcorn.

Though we found the cake to be a little dry in the Guava Cream Cheese Roll, we loved the tanginess of the guava and cream cheese combination. And the Chocolate Decadence, a gluten-free dessert made with flourless chocolate cake, ticked all my chocolate lover boxes with its bittersweet flavors.

We also got an assorted half dozen box of macarons, Fillings and Emulsions’ specialty, including Strawberry Lemon, Blue Raspberry, Vanilla and Salted Caramel, Marshmallow Blackberry, Chocolate Raspberry, and Pistachio and Cherry.

We enjoyed every clever match of each two specific flavors, from the acidic zing of the Strawberry Lemon and sweetness of the Blue Raspberry to the delightful gooey texture of the Vanilla and Salted Caramel and subtlety of the Marshmallow Blackberry.

Needless to say, the new Provo patisserie both satisfied my sweet tooth and pleased all of our Fillings and Emulsions.
