Pleasant Grove restaurant to host fundraiser supporting family of 9-year-old killed in fatal crash

Kimberly and Tyler Gibbs did their best to contain their emotions Thursday while speaking through tears remembering their son, Dalton, whose life was cut short just shy of his 10th birthday after being hit and killed in a Pleasant Grove intersection late last month.
During the funeral service held at the Mount Mahogany 4th Ward chapel in Pleasant Grove, Dalton’s parents shared heartfelt tributes highlighting his life, character and impact on their lives as well as those around him.
“Dalton was blessed to have an abundance of love and the gift of being able to express it to everyone,” Kimberly Gibbs said before the dozens of family members, friends and loved ones in attendance.
She emphasized Dalton’s unwavering faith and his eagerness to live life to the fullest.
The mother recounted his eagerness to seize every moment of life and how he would often ask his mother about her wake-up time because he cherished the time with her.
“He literally did not want to miss a moment of life with anybody,” Kimberly Gibbs said.
Dalton was a fourth grade student at American Heritage School in American Fork, where his family says his curiosity and enthusiasm delighted his teachers and classmates alike, his obituary reads.
On April 29, the 9-year-old was biking home from school when he was reportedly struck by an elderly man driving a truck at the corner of 900 W. 2600 North in Pleasant Grove, according to police.
Dalton was taken to a hospital where he later died.
He would’ve celebrated his 10th birthday on June 10.
Local businesses have stepped up to help with incurred expenses.
Chubby’s Neighborhood Cafe, located at 336 S. Main St. in Pleasant Grove, has offered to donate all proceeds from its sales on Monday to support the Gibbs family.
Tom Moak, co-owner of the Chubby’s Cafe franchise, said the husband of an employee at the Pleasant Grove location is a friend of the Gibbs family, and with the incident happening in the local community, they wanted to help out.
“Seeing something like that, you know it pulls at your heartstrings, and it’s just a tragic ordeal,” he told the Daily Herald.
Moak said he sympathizes with those who have to take on the financial challenges brought on by unexpected medical emergencies.
“You don’t think beyond what’s needed; you just think funeral expenses and everything’s good. But there’s so much more that family is going to go through financially,” Moak said.
He says the community-minded franchise often looks for ways to give back and provide a helping hand in time of need.
“Every year we try to find a family that’s in need and donate 100% of the proceeds to the family. So when the opportunity arose, this is who we wanted to put our support behind for this year, for this location,” Moak explained.
He continued: “You know, there’s been a lot of people that have helped us out throughout the years, and it’s just our way of giving back.”
